Salted Pumpkin Spice Latte Caramels

I wait all year to make these. My caramel base gets slow cooked the way it always is, then I fold in warm pumpkin pie flavoring and freshly ground coffee from Makeworth Coffee Roasters, our local roaster just down the road. The coffee is real, ground fresh, and it gives these Pumpkin Spice Latte Caramels that deep latte warmth sitting behind the sweetness. There is no added color here, just the natural amber of the caramel itself. Soft, rich, and finished with Light Grey Celtic sea salt. This is a seasonal batch, so get them while you can.
