About Us

Süss is the German word for sweet. I grew up in Austria with that word everywhere. My mother was Viennese, and candy was never an afterthought in our house. It was something you chose carefully, something that meant something.

When I moved to the United States, I went looking for that same thing. I wanted candy made with real ingredients. No artificial dyes, no petroleum-derived flavors, nothing I couldn't actually identify. I couldn't find it. So in 2023, I started making my own.

Made in Bellingham, WA

I work out of a commercial kitchen in Bellingham, Washington. Everything is small batch. I make the chews, the caramels, the lollipops, and the hard candy by hand, one batch at a time.

The caramels are built on organic sweetened condensed milk and organic unsalted butter, cooked to exactly 245F for that soft, slow chew. I finish them with Light Grey Celtic sea salt from Selina Naturally. It's a specific salt. It matters.

Hard candy cooks to 310F and requires two people in the kitchen. Everything else I make alone.

For color, I use beets, turmeric, spirulina, purple carrot, and red radish. Nothing synthetic. The flavors come from Natures Flavors and Olive Nation, both botanical-sourced. Not petroleum-derived. That distinction matters to me, and I think it matters to people who are paying attention to what they eat.

You'll find me most weekends at the Bellingham farmers markets. I love that part. Watching someone taste something for the first time, seeing if they reach for another piece. That's the real feedback.
